- Preheat your oven to 200°C (fan 180°C). Line a large baking tray with parchment paper. Toss the sweet potato cubes with 1 tablespoon of olive oil, smoked paprika, cumin, and salt. Spread them in a single layer — you should hear a gentle sizzle as they hit the hot tray. Roast for 25-30 minutes, turning halfway, until they are tender when pierced with a fork and have deep golden-brown edges with a slightly sticky surface.
- Meanwhile, place the rinsed quinoa in a medium saucepan with the vegetable stock. Bring to a boil over high heat — you'll see small bubbles forming around the edges and hear a steady simmer. Reduce the heat to low, cover, and let it cook for 15 minutes. The quinoa will absorb the liquid and become fluffy; you'll know it's done when the tiny white spirals (the germ) separate from the grains and the texture is tender but still slightly chewy. Remove from the heat, fluff with a fork, and keep covered.
- While the quinoa cooks, toss the red onion wedges with the remaining olive oil on a separate small baking tray. Roast for 20 minutes until they soften and develop caramelised brown tips — the edges should look slightly charred and smell sweet and mellow.
- In a dry frying pan over medium heat, toast the pumpkin seeds and sesame seeds for 2-3 minutes. Shake the pan frequently; you'll hear them start to pop and smell a warm, nutty aroma. As soon as they turn golden, tip them into a bowl to stop them burning.
- Wipe the same pan clean, add a splash of water, and wilt the kale over medium heat for 3-4 minutes. Stir constantly — the leaves will turn a vivid, bright green and reduce significantly in volume. You want them just tender, not soggy, with a slight squeak when you bite them.
- Make the dressing: whisk the tahini, lemon juice, maple syrup, and crushed garlic together in a small bowl. The mixture will seize up and look thick — don't panic. Slowly add the warm water, a tablespoon at a time, whisking continuously until you have a smooth, pourable consistency the texture of single cream. Taste and adjust the seasoning with a pinch of salt if needed.
- Assemble the bowls: divide the fluffy quinoa among four bowls. Top with roasted sweet potato, caramelised red onion, wilted kale, and the chickpeas. Drizzle generously with the tahini dressing, scatter over the toasted seeds, and finish with a handful of fresh parsley.
