Ingredients
  

  • 400 g boneless skinless chicken breasts (about 2 large breasts)
  • 2 tablespoons olive oil plus extra for drizzling
  • Juice of 1 lemon
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 300 g dried orzo pasta
  • 1 litre chicken stock or water, if you prefer a lighter flavour
  • 150 g good-quality basil pesto about 6 tablespoons
  • 200 g cherry tomatoes halved
  • 1 large courgette sliced into half-moons
  • 1 red bell pepper diced
  • 50 g pine nuts toasted
  • 30 g fresh basil leaves torn
  • 50 g Parmesan cheese shaved (optional)

Method
 

  1. Marinate the chicken. In a shallow dish, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper. Add the chicken breasts and turn them to coat thoroughly. Cover and leave at room temperature for 15 minutes—the smell of lemon and garlic will begin to fill the kitchen.
  2. Toast the orzo. Place a large, heavy-based saucepan over a medium heat. Add a drizzle of olive oil, then tip in the dried orzo. Stir constantly for 2–3 minutes. You’ll hear it begin to crackle, and you’ll see the grains turn a pale, golden brown at the edges—this toasting step adds a nutty depth that boiling alone never achieves.
  3. Cook the orzo. Pour in the chicken stock and bring it to a gentle boil. Reduce the heat to a simmer and cook, stirring occasionally, for 8–10 minutes, until the orzo is tender but still has a slight bite. The liquid should be mostly absorbed, leaving the orzo looking plump and glossy. Drain any excess stock if necessary, then stir through the pesto until every grain is coated in a vibrant green sheen.
  4. Grill the chicken. While the orzo cooks, heat your grill or grill pan over a high heat until it’s smoking—you should feel the heat on your palm when you hold your hand 15 cm above the surface. Place the marinated chicken on the grill and cook for 5–6 minutes per side. Listen for the satisfying sizzle as the meat hits the hot metal; the edges will turn deep brown and you’ll see distinct char lines forming. The internal temperature should reach 74°C on a meat thermometer. Once done, transfer the chicken to a board and let it rest for 5 minutes—this keeps the juices inside where they belong.
  5. Grill the vegetables. In the same pan (or a separate one if you prefer), toss the courgette slices and cherry tomatoes with a little olive oil and a pinch of salt. Grill for 2–3 minutes per side, until the courgette has softened and sports dark grill marks, and the tomatoes have blistered and begun to release their sweet, tangy juice. The smell at this stage is intoxicating—smoky, sweet, and slightly charred.
  6. Assemble the bowls. Slice the rested chicken into thick strips against the grain—the meat should be white and juicy, with a faint pink blush from the smoke. Divide the pesto orzo among four bowls, then top with the grilled chicken, courgette, blistered tomatoes, and diced red pepper. Scatter over the toasted pine nuts and torn basil, and finish with shaved Parmesan if using. Serve immediately, while the orzo is still warm and the chicken is at its tender best.

Notes

For a lighter flavor, substitute chicken stock with water. To save time, you can use store-bought pesto. Let the chicken rest before slicing to keep it juicy.
