Ingredients
  

  • 400 g dried pasta such as fusilli, farfalle, or penne
  • 250 g fresh mozzarella pearls drained
  • 2 medium courgettes diced
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 150 g cherry tomatoes halved
  • 100 g pitted black olives halved
  • 1 small red onion finely diced
  • 60 ml extra virgin olive oil
  • 30 ml balsamic vinegar
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • ½ teaspoon sea salt plus more for pasta water
  • ¼ teaspoon freshly ground black pepper
  • A large handful of fresh basil leaves torn
  • Optional: 200g cooked shredded chicken breast

Method
 

  1. Cook the pasta to al dente. Bring a large pot of generously salted water to a rolling boil. Add your pasta and stir. Cook according to package directions until it’s al dente — you want it tender but with a slight, pleasurable bite at the centre. You’ll see the water become starchy, and the pasta will release a warm, earthy aroma. Drain in a colander and rinse with cold water to stop the cooking process and cool it down quickly. Shake the colander well to remove excess water.
  2. Toast the pasta in a pan (optional, but magical). For a deeper, nuttier flavour, heat a large frying pan over a medium heat. Add the drained, cold pasta in a single layer. Let it sit for 2-3 minutes without stirring — you’ll hear a soft sizzle and see the edges begin to turn a pale, golden brown. The smell will shift from boiled starch to a toasted, almost popcorn-like aroma. Toss gently and toast for another 2 minutes. Transfer to a large mixing bowl.
  3. Sauté the vegetables for sweetness. In the same frying pan, add 1 tablespoon of olive oil over medium heat. Add the diced red onion, courgettes, and bell peppers. Sauté for 5-7 minutes, stirring occasionally. You’ll hear a gentle sizzle, and the vegetables will soften and begin to release their natural sweetness. The courgettes will turn translucent, and the peppers will become slightly charred in spots. The kitchen will fill with a sweet, savoury fragrance. Remove from heat and let cool slightly.
  4. Make the bright, herby dressing. In a small bowl, whisk together the remaining olive oil, balsamic vinegar, minced garlic, dried oregano, salt, and pepper. Whisk until the mixture emulsifies and looks slightly thickened and glossy. The smell of the garlic and oregano will be sharp and inviting.
  5. Combine the cooled ingredients. To the bowl of toasted pasta, add the sautéed vegetables, halved cherry tomatoes, black olives, and the fresh mozzarella pearls. The mozzarella pearls should feel cool and slightly springy to the touch. Gently fold everything together with a large spoon, being careful not to break the delicate mozzarella.
  6. Dress and rest for the magic. Pour the dressing over the salad and toss gently until everything is evenly coated. You’ll see the pasta take on a beautiful, glossy sheen. Finally, scatter the torn basil leaves over the top and fold them in. Cover the bowl and let it rest at room temperature for at least 15 minutes. This rest time allows the flavours to meld and the pasta to absorb the dressing. The aroma will become more rounded and complex.

Notes

Optionally add 200g cooked, shredded chicken breast for extra protein. The toasted pasta step is optional but recommended for a deeper flavour. Letting the salad rest for 15 minutes at room temperature is crucial for the best taste.
