- Marinate the chicken: In a mixing bowl, combine the juice of one lemon, half the minced garlic, two tablespoons of olive oil, the dried oregano, smoked paprika, and a generous pinch of salt and pepper. Add the chicken thighs and turn them to coat thoroughly. Cover and leave to rest at room temperature for 20 minutes. You’ll notice the aromas of the herbs and garlic beginning to meld together.
- Toast the quinoa: Place a medium saucepan over a medium heat. Add the quinoa and toast it for 2–3 minutes, stirring constantly, until it releases a nutty, warm aroma and you hear a faint crackling sound. This step deepens its flavour and gives it a lovely, slightly chewy texture once cooked.
- Cook the quinoa: Pour in the chicken stock (or water) and add a pinch of salt. Bring it to a gentle boil, then reduce the heat to low, cover, and let it simmer for 15 minutes. When it’s done, the liquid will be fully absorbed and the quinoa will look fluffy, with the tiny white germ rings visible around each grain. Remove from the heat, fluff with a fork, and keep covered.
- Sear the chicken: While the quinoa cooks, heat the remaining tablespoon of olive oil in a large frying pan over a medium-high heat. When the oil shimmers and a drop of water sizzles on contact, place the chicken thighs in the pan in a single layer. Do not crowd them. Let them cook undisturbed for 5–6 minutes, until the underside is a deep, golden brown. You’ll hear a steady, satisfying sizzle. Flip them over and cook for another 5–6 minutes, until the internal temperature reaches 74°C and the juices run clear.
- Rest the chicken: Transfer the cooked chicken to a cutting board and let it rest for 5 minutes. This is crucial—the juices need time to redistribute back into the meat. If you slice it immediately, you’ll lose that precious moisture. While it rests, the smell of seared lemon and oregano will be irresistible.
- Prepare the fresh components: In a large bowl, combine the diced cucumber, halved cherry tomatoes, sliced red onion, and Kalamata olives. Drizzle with the remaining lemon juice and a little olive oil, then season with salt and pepper. Toss gently. The colours should be bright and vibrant, with the cucumber looking crisp and the tomatoes plump.
- Slice the chicken: Once rested, slice the chicken thighs against the grain into thick strips. The interior should be moist and opaque, with a beautifully browned exterior.
- Assemble the bowls: Divide the fluffy quinoa among four wide bowls. Top with the fresh vegetable mixture, then arrange the sliced chicken on top. Sprinkle generously with crumbled feta and fresh parsley. Finish with a final squeeze of lemon juice and a crack of black pepper. Serve immediately, while the chicken is still warm and the quinoa is tender.
Notes
Chicken can be marinated overnight for deeper flavor. For a lighter option, use chicken stock instead of water for cooking quinoa.
