Ingredients
  

  • 2 x 400g tins of chickpeas drained and rinsed thoroughly
  • 1 large cucumber about 300g, preferably a Lebanese or English cucumber
  • 1 small red onion about 100g, finely diced
  • 1 large red bell pepper about 200g, deseeded and diced
  • A generous handful of fresh mint leaves about 15g, finely chopped
  • A generous handful of fresh flat-leaf parsley about 15g, finely chopped
  • Seeds from 1 large pomegranate about 150g of seeds
  • 100 g crumbled feta cheese optional
  • 60 g toasted pine nuts or slivered almonds for crunch
  • Juice of 1 large lemon about 3 tablespoons
  • 1 teaspoon of lemon zest
  • 4 tablespoons extra virgin olive oil
  • 1 small clove of garlic minced to a paste
  • ½ teaspoon of fine sea salt
  • ¼ teaspoon of freshly ground black pepper
  • ½ teaspoon of sumac optional, for a tangy, earthy note

Method
 

  1. Prepare the Cucumber: Halve the cucumber lengthways, then slice each half into half-moons about ½ cm thick. Place the slices in a colander, sprinkle with a generous pinch of salt, and let them sit for 10 minutes. You’ll see tiny beads of water appear on the surface—this draws out excess moisture, ensuring your salad stays crisp, not watery. Give them a gentle shake and pat dry with a clean tea towel.
  2. Toast the Nuts: While the cucumber rests, place the pine nuts or almonds in a small, dry frying pan over a medium heat. Swirl the pan gently for 2-3 minutes. You’ll hear a faint sizzle and a warm, buttery, nutty aroma will fill the air. As soon as they turn a light golden brown, tip them onto a plate to stop them from burning. The sound of them cooling on the metal is a little clatter of success.
  3. Build the Base: In a large, wide salad bowl, combine the drained chickpeas, the prepared cucumber, the diced red onion, and the diced red pepper. Take a moment to admire the mosaic of colours—the soft beige of the chickpeas against the vibrant green and fiery red. Toss gently with your hands or salad servers to distribute everything evenly.
  4. Make the Dressing: In a small jar with a tight-fitting lid, combine the lemon juice, lemon zest, olive oil, minced garlic, salt, pepper, and sumac if using. Screw the lid on tightly and shake vigorously for about 30 seconds. The sound of the ingredients emulsifying is a satisfying, rhythmic shake. Uncap it and inhale—the bright, sharp scent of lemon and garlic is the heart of this salad.
  5. Dress and Marry the Flavours: Pour the dressing over the salad bowl. Use your salad servers to gently fold and coat every ingredient.
