- Prepare the chicken: Pat the chicken thighs dry with kitchen paper. In a bowl, toss them with olive oil, smoked paprika, garlic powder, and a generous pinch of salt and pepper. Let them sit for 10 minutes while you prepare the other bits—you'll notice the spices beginning to bloom, releasing a warm, earthy fragrance.
- Make the dressing: In a small bowl, whisk together the buttermilk, soured cream, and lemon juice until smooth and velvety. Fold in half the crumbled blue cheese, leaving some chunks for texture. The mixture will thicken slightly as it sits; taste it—it should be tangy, creamy, and just a little sharp.
- Sear the chicken: Heat a large, heavy-bottomed frying pan over medium-high heat. Place the seasoned chicken thighs in a single layer, being careful not to crowd the pan (you may need to do this in two batches). Cook for 5–6 minutes on each side, until the underside is deeply golden and you hear that satisfying sizzle. The chicken should feel firm to the touch but still yield slightly.
- Make the buffalo sauce: While the chicken rests, combine the buffalo hot sauce, butter, and honey in a small saucepan over low heat. Stir until the butter has melted completely and the sauce is glossy and smooth. You'll smell the tangy, piquant aroma of the hot sauce mellowed by the sweetness of the honey.
- Glaze the chicken: Slice the rested chicken thighs into thick strips. Tumble them into the warm buffalo sauce, turning gently to coat every piece. The sauce will cling to the chicken like a sticky, fiery glaze. Let it sit in the sauce for a minute or two to absorb the flavour.
- Assemble the salad: In your largest salad bowl, combine the chopped romaine, carrot ribbons, sliced celery, and red onion. Toss gently with your hands—you want the vegetables to be well mixed but not bruised.
- Finish and serve: Pile the warm, saucy buffalo chicken strips on top of the salad. Drizzle generously with the blue cheese dressing, then scatter the remaining crumbled blue cheese over the top. Serve immediately, while the chicken is still warm and the salad is crisp—the contrast is everything.
